First and foremost, I cannot take credit for these ridiculously good pecan pie bites. I found the recipe online at tastykichen.com the Irishman’s request, but as soon as I sampled my first bite, I knew I had to share them with all of you. Add in the fact that they require only 5 ingredients and cook in less than 30 minutes and these officially made their way onto my “keeper” list. Plus, we are closing in on the holiday season where we’re all going to need to contribute something at Thanksgiving, Christmas or the random office and school parties that we all attend and these are seriously perfect.
Here’s what you need:
1 cup packed light brown sugar
1/2 cup all-purpose flour
1 cup chopped pecans
2/3 cup softened butter
2 whole eggs
Preheat your oven to 350 degrees for starters. Then, stir together the brown sugar, flour and pecans in a medium size bowl. In a separate bowl, beat together the softened butter and eggs until smooth. Stir the wet ingredients into the dry until they’re combined and then spoon the batter into greased mini muffin tins or a mini muffin pan. Fill the cups about 3/4 full and bake for 20 to 25 minutes.
Needless to say, these are beyond phenomenal when served warm. So go forth this fall baking season and knock the socks off of your friends, family and coworkers with this simple recipe.
