Chicken Salad

Unbelievably, I had chicken leftover after I made chicken pot pie and chicken noodle soup. Searching through chicken recipes, I decided on making chicken salad for the Irishman. I remember roughly how I used to make it years ago, but I did a quick recipe search and came up with the following. Here’s what you need:
2.5 cups diced cooked chicken
1/2 cup thinly diced celery
1/2 cup quartered grapes
1/2 cup mayonnaise
1/8 cup minced onion
1 Tablespoon dried parsley
1 teaspoon lemon juice
a dash of Worcestershire
a dash of ground ginger
salt and pepper to taste
Oh and if you feel like taking this over the top, crisp up 3 slices of bacon and crumble. Just mix it all up in a large bowl and let it sit for about at least 30 minutes (if you have time and patience) and then serve it either on a sandwich or on top of a salad (also called a chicken salad salad). Delicious.
