Okay, so I realize that at least once a month, I declare a new recipe my favorite, but seriously, this pan seared cod and these green beans are toe-curling yummy. I have a freezer full of wild cod loins that I would normally have made into Fish and Chips, but since I am bound and determined to fit into my skinny jeans sooner rather than later, I decided to try something different with the cod. I am so glad I did.
This recipe is ridiculously easy and the cod loins cooked in less than 10 minutes. All you need is salt and pepper (or a seasoning salt blend like I used), lemon, olive oil, a pad of butter and of course, cod. I love this fish because it’s not fishy at all. If I’m cooking flounder or catfish or even salmon, I need to smother it in something to disguise the “fish” factor, but cod is so mild and buttery that it is delicious with just the lightest seasoning.
Go ahead and season both sides of the fish. Then, heat about 1 tablespoon of olive oil and a pad of butter (I used about 1/2 tablespoon) over medium-high heat. Once the butter has melted, go ahead and add the fish. Once the fish is in the pan, squeeze the juice of half a lemon over the top of it. Now, leave it alone for a full 5 minutes (you don’t want the fish to fall apart). Once you flip the fish, go ahead and squeeze the other half of the lemon on the other side and let it cook for about 4 more minutes (depending on the thickness of the fish). And that’s it! Seriously, the fish is ready to eat as is.
For the Garlic Green Beans recipe that my friend, Renee, passed along (bless her!), here’s what you need:
2 tablespoons olive oil
1(1-pound) bag frozen cut green beans (I used fresh)
2 tablespoons butter (I cut this in half)
2 tablespoons fresh lemon juice
1 teaspoon sugar
½ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon minced garlic
Heat your olive oil over medium–high heat. Add in your beans and cook until they’re lightly browned, approximately 15 minutes, stirring frequently. Reduce heat to medium. Add butter, lemon juice, sugar, salt, and pepper, stirring until butter melts. Add in the garlic. Cook 3 to 4 minutes, stirring constantly. Serve and enjoy!
Seriously you guys, make these the first chance you get. They are so delicious and the entire meal comes together in under 30 minutes. You can’t beat that.
